I provide specialized culinary consulting for organizations and communities seeking Indigenous food expertise informed by classical culinary training and professional chef practice. My work focuses on the ethical sourcing, preparation, and presentation of Indigenous ingredients, including large game, game birds, small game, fish and seafood, native herbs and seasonings, seasonal vegetables, and wild edibles, approached through both traditional knowledge systems and contemporary culinary standards.

With more than 35 years of professional experience in the culinary and hospitality sectors, I offer strategic guidance and leadership for cultural programming, educational initiatives, curriculum development, and food-based enterprises. My work extends to media and public-facing platforms, where I translate Indigenous food knowledge into engaging, accessible, and academically grounded presentations that support learning, cultural understanding, and audience engagement across diverse settings.

      Commercial Kitchen Planning and Restaurant Transformation​​

I provide consulting services for the planning, development, and transformation of commercial kitchens and foodservice operations. Projects are tailored to client needs and may include facility assessment and upgrades, operational planning, menu development, management systems, staff training, and strategic marketing.

For organizations and communities developing new facilities, I offer guidance from concept to completion, supporting the design and build of commercial-grade kitchens suited for community use, high-volume production, institutional foodservice, or catering operations. My approach integrates functional efficiency, regulatory compliance, and long-term sustainability.  

Special Events Menu Design and Culinary Coordination

While I no longer provide direct catering services, I collaborate closely with clients and their selected catering teams to design menus that showcase Indigenous Fusion cuisine for special events. I can also provide on-site culinary coordination within the Greater Toronto Area to ensure menu integrity, cultural accuracy, and smooth execution.

In addition, I develop custom menus for restaurants, hotels, resorts, and lodges, aligning culinary identity with operational realities, guest experience, and brand positioning.

Speaking Engagements and Event Hosting (MC)

I am available for speaking engagements and event hosting across academic, corporate, cultural, and industry settings. My presentations draw on professional experience in hospitality leadership, entrepreneurship, culinary education, and Indigenous food systems, offering audiences a thoughtful, engaging, and accessible perspective.

As a master of ceremonies, I bring clarity, energy, and presence to live events, ensuring strong audience connection while supporting the tone and objectives of the program.

Cooking Demonstrations

Indigenous Fusion Cooking Demonstrations (Live)

I offer live Indigenous Fusion cooking demonstrations designed to educate, engage, and inspire diverse audiences. These demonstrations explore Indigenous ingredients, culinary techniques, and food knowledge systems through a contemporary professional lens, making them well-suited for corporate conferences, health and wellness expos, community fundraisers, diabetes education initiatives, cultural events, and curated private gatherings.

Each presentation combines culinary expertise, cultural context, and practical application, creating an interactive learning experience that connects food, health, and Indigenous knowledge in an accessible and respectful manner.

Virtual Indigenous Fusion Cooking Demonstrations

I also deliver Indigenous Fusion cooking demonstrations in a virtual format using Zoom/Teams. These sessions mirror the depth, structure, and educational focus of my live demonstrations while offering flexibility for remote, national, and international audiences. Virtual demonstrations include guided cooking instruction, cultural interpretation, and opportunities for audience engagement and discussion.

I offer Indigenous Fusion culinary training programs for communities, schools, and organizations seeking innovative approaches to health education, cultural learning, and team development. Programs can be delivered in live or virtual formats and are designed to support staff development, student learning (elementary through secondary), client engagement, and community capacity building.

These sessions combine food literacy, wellness, and cultural education, providing meaningful learning experiences that are both informative and engaging.

“Watch and Learn” Virtual Indigenous Fusion Cooking Classes

The “Watch and Learn” series features family-friendly Indigenous Fusion recipes presented in an accessible, educational format. Participants are invited to observe, learn, and prepare dishes independently at their own pace, making these sessions ideal for households, community groups, and organizations seeking flexible learning options.

“Cook Indigenous Fusion with the Wolfman” Virtual Cooking Classes

These interactive, hands-on virtual classes invite participants to cook alongside me in real time. Designed for youth, parents, families, and community groups, these sessions emphasize shared experience, skill development, and cultural connection through food, fostering collaboration and confidence in the kitchen.

Healthy Eating and Healthy Weights Promotion Workshop

This workshop explores healthy eating and weight management through a holistic and culturally informed approach. It addresses nutrition, lifestyle, and practical decision-making, with an emphasis on realistic strategies for individuals, families, and communities, including those working within limited budgets.

Designed for health educators, families, and community organizations, the workshop focuses on building food literacy, encouraging sustainable habits, and reframing conversations around health and wellness. Sessions are interactive and participatory, emphasizing discussion and practical application rather than passive learning.

Recipe for Success: Personal and Professional Goal-Setting Workshop

This workshop supports participants in identifying, clarifying, and pursuing personal and professional goals. Through guided reflection and structured frameworks, participants examine recurring ideas and aspirations, explore barriers to action, and develop strategies for moving forward with intention and confidence.

Drawing on lived experience and professional practice, the session addresses resilience, managing setbacks, reframing challenges, and cultivating positive habits that support long-term success. The workshop is designed to be engaging, reflective, and action-oriented.

Experiential Culinary and Cultural Tourism Development Workshop

This workshop is designed for communities and organizations interested in developing sustainable culinary and cultural tourism initiatives. It examines how authentic Indigenous foodways and cultural experiences can be respectfully translated into viable tourism products that attract culinary and cultural travellers seeking meaningful engagement.

Participants are guided through the planning and coordination of experiences, services, and partnerships that support economic development while maintaining cultural integrity and community values.

Kitchen Warriors Cooking Competitions offer a highly interactive and engaging culinary experience designed for team building, professional development, and community engagement. These facilitated competitions combine creativity, collaboration, and problem-solving within a structured and energetic culinary challenge.

Suitable for corporate groups, educational institutions, and community organizations, Kitchen Warriors events emphasize teamwork, communication, and adaptability while delivering an entertaining and memorable experience. Competitions can be delivered in person or virtually, allowing participants to engage collaboratively from multiple locations.
